Executive Chef Cathy Hohmeyer has spent nearly 25 years specializing in utilizing local products with Old World flair. A doctoral candidate in culinary naturopathy, the Adirondack Cooking School’s philosophy is about enjoying nutrient dense and whole foods that are simple, healthy and Old World delicious. The Adirondack Cooking School has 4 types of immersions:

Meet Executive Chef and co-owner Cathy Hohmeyer, a doctoral candidate in Naturopathy for a fun, laid back and informative cooking demonstration – right before your dinner with us with a glass from the Adirondacks only hand-crafted Wine & Bier Keller! Topics are based on the Adirondack seasons and include a wide variety of culinary demonstrations designed to renew your spirit in cooking (“I feel like I am in a cooking rut!”), take a fresh look at cooking and simple ways to prepare healthy yet sassy (saucy) meals!

Afternoon Culinary Workshops
3-hr interactive programs where you learn, cook and taste on seasonal culinary topics. Have dinner following and stay overnight in one of our special Adirondack Cooking School Dine & Stay experiences. Samples of culinary workshops have included:

Week-end Culinary Programs
Immerse yourself in a week-end culinary immersion in one of the last original Adirondack lodges still open to the public that serves as 4-season Great Camp base lodge to NYS’s only wilderness canoe region. Arrive Friday night for light dinner and reception of original Adirondack Alps pub samplings with a wine and bier tasting from the Adirondacks only hand-crafted Wine & Bier Keller. Enjoy the evening in your hand-crafted lodging. Saturday, wake-up to the call of the loons or a quick ski on our nature trails. Enjoy a world famous Adirondack Alps breakfast while you are introduced to the Adirondack Cooking School. Morning and afternoon workshops follow with a delectable lunch. There is a break before the evenings tasting dinner so that you may enjoy the sights and natural sounds of the St. Regis Wilderness region or a visit to historic Saranac Lake or the Olympic area of Lake Placid. Sunday morning enjoy a brunch culinary workshop and take home Gourmet food baskets with Wine & Bier Samplers.

Week-long Certificate Program
Sponsored by the Westin Price Foundation, Slow Foods International, and others. Enjoy a truly unique opportunity to immerse yourself in an interactive culinary program with ample opportunity to explore the Adirondack “Great Woods”. In fact, one part of your experience will be an Adirondack Culinary tour. This intensive, interactive program will take you from start to finish on a whole series of culinary topics. There are introductory and advanced classes. Week-long certificate programs have included:
- Roasts, Stews & Sautee’s
- Healthy Living by Delicious Eating
- Old World Cooking with the New World in Mind
- Eating from the Garden All Year
- Restaurant Cooking: Using the Principles at Home
These week-long culinary journeys take you from planning to exploring various meats and cuts with the goal in mind of cooking once and eating for the week. With busy schedules, there are simple methods to eat healthy and with great taste if you have plan. The class will thoroughly examine how you can take various products from meats to vegetables and use it to its maximum potential. This will maximize your food budget and save you time. And oh yes, sauces, sauces and sauces. Participants will go through a complete meal by using the same food product with different twists. A visit to the Paul Smiths College Culinary School and an Adirondack Culinary tour to other restaurants that emphasize local Adirondack foods and meet their chef will also be included. There is also a day to see the Olympic venues or explore the Adirondack wilderness with hiking or skiing immersions. Each days cooking class will conclude with a special tasting program ranging from a history of bier and wine with samplings from the Adirondacks only hand-crafted Wine & Bier Keller, to an evening with an Adirondack farmer or visiting chef. One evening will also include a tasting of the dishes you have made under Chef Cathy’s tutelage. Sunday – Thursday: $895PP includes all materials and meals. Lodgings are your choice and are not included. 5 hours of Follow-up assistance and 1 year membership to the Adirondack Cooking School included as well as the “Cooking with Spirit” newsletter filled with tips and recipes.
